These charming choco-
lates are made with local
clover honey from Drap-
er's Apiaries in Millerton,
PA. To create them, we
heat the honey just to the
point of caramelization,
adding cream, sugar, and
a touch of sea salt until
it becomes a uniquely
smooth and decadent
liquid caramel, then pour
it into 62% dark choco-
late shells that have been
painted by hand with
colored cocoa butter to
resemble bumblebees.
